Recipe: 5 Ingredient Easy Tangy Guacamole

Well the sun is finally out here, and the temperatures are consistently over 60 so in our house, that means summer has arrived.  There really isn't a time of year I'm not entirely in love with here in Washington, but the beginning of each season is always so unique to me.  I think it’s because each season is so different from each other that they each stand out, especially after the transition.  Spring, summer, fall, and winter all contrast each other so sharply, they always feel extra special to me, and that’s not all that's changing.  After the chilly months are long gone, my kitchen transforms from a warm, soup making chemistry lab into a simple, refreshing salad center with a fridge always stocked with iced tea.

Finally, my weekends can be filled with sunshine, gardening, camping and of course, guacamole.  My favorite snack and appetizer to make and I have no shame - I will eat an entire bowl of guac’ for a meal.  But now that it is so perfectly warm and shady outside, I especially like to enjoy my guac with some extra tanginess thanks to a generous helping of citrus.  

When it comes to the summer months, I tend to keep my recipes fresh and straightforward which is why I think this guacamole is perfect for this time of year.  It is super simple because let's face it, and I tend to burn out fast so the more efficient and simple the better when it comes to cooking.  That’s why I tried to limit this recipe (and all of my recipes) to just five ingredients.  This is not your mother-in-law's fancy, funky guacamole.  This is a guac for the fresh, light lovers or the lazy.

Full disclosure - I hate cilantro and it is NEVER in my house.  If I want a flavor to ruin a dish for my taste, I will throw a handful of cilantro into it, so you will notice it is absent from my recipe.  When looking at this you might think its a boring, and you’d be right, but I have found it always to be a crowd pleaser and even better - it usually can be made with what you might already have in your refrigerator.  I personally love to enjoy this guacamole with pickled carrots, but you can’t go wrong with tortilla chips and the secret treasure to this recipe?  It’s simple enough to make it your own.  If you are feeling spicy, add some!  Want a little more chunk?  Throw a couple of spoonfuls of your favorite salsa.  This recipe, like all of my recipes, are great because they act as a canvas for each chef to build on as their own.  If you do make this and add something new and fun to it, please share in the comments below!

5 Ingredient Easy Tangy Guacamole

Ingredients

  • One large ripe avocado
  • Half of a large Meyer lemon
  • Half of a small lime
  • Half of a small red onion chopped to desired texture (I prefer chunky)
  • One clove of garlic minced

Spices

  • Salt and Pepper the Taste

Steps

  1. Cut open ripened avocado, scoop meat into a bowl.  Add onion and garlic.
  2. Squeeze half of lemon and lime into the bowl with avocado, be sure to pick out any seeds that fall in.  
  3. Using a fork, mash up the avocado and stir ingredients together, so they are well mixed.  
  4. Add salt and pepper to taste and service with chips or veggies.  Enjoy!

*Store in air tight container in the refrigerator to keep fresh.
